Fresh Cretan gluten free white fish with boiled courgettes and a Greek salad

What haven’t I done before? I haven’t cooked fish as a whole.


Ingredients (serves 2):
2 x Fresh white fish (Cretan if you happen to be there)
10 x Small courgettes (or 5 regular British courgettes)
3 x Vine tomatoes
1 x Small cucumber (half a British cucumber)
1 x Small red onion
1 x Block of feta
1 x Lemon
Olives
Olive oil
Oregano
Salt
Pepper

Method:
1. Pre-heat the oven at 180 degrees celcius.
2. Place the whole, unscaled fish in the dish. Drizzle with olive oil then sprinkle with salt and pepper. Pop in the oven for 35 minutes.

3. Wash the courgettes and cut the ends off (if you are using regular British courgettes then cut in half). Pop in a pan of boiling water and boil for 35 minutes.
4. Whilst the fish and courgettes are cooking prepare the salad – simply chop each tomato into 8 chunks and place in a bowl – lightly salt. Then cut the cucumber into chunks (as small/large as you wish and you can even peel if you prefer) – pop into the bowl. Chop the onion into thin slices – add to the bowl. Then sprinkle the olives over the salad. Pour olive oil over the dish and add salt and pepper. Place the feta on the top and then sprinkle oregano on the top.
5. After 35 minutes take the fish out of the oven and plate – serve with a wedge of lemon.
6. After 35 minutes drain the courgettes and plate – serve with a wedge of lemon.
