Gluten free courgette pesto

What haven’t I done before?
Made fresh pesto.

Ingredients (serves 4):
3 x Courgettes, peeled and finely diced
2 x Garlic cloves, finely crushed
0.5 x Fresh lemon
2 x Large handfuls of spinach
Handful of fresh basil
2 x Tbsp parmesan, freshly grated
2 x Tbsp olive oil
Salt and pepper

1. Put everything apart from the spinach into a bowl and give it a really good mix.
2. This can then be added to gluten free spaghetti or pasta and wilted spinach.
