Gluten free mini lime cheesecakes

What haven’t I done before? Made a cheesecake.

Ingredients (serves 2):
133g Cream cheese (I used Lidl’s own which was lovely)
17g Icing sugar, sifted
1 x Lime
Splash of double cream
4 x Gluten free digestives
25g x Butter

Method:
1. Mix the cream cheese, icing sugar, lime juice and double cream together. Make sure you have mixed it really well so there are no lumps.
2. Heat up the butter on the hob.
3. Blitz the biscuits in a blender and put in a bowl, then mix in the melted butter.
4. Press the biscuit base into the moulds as tight as possible – then put the cheesecake mixture on top of the base and smooth it down. Pop a slice of lime on the top for decoration. Put in the fridge for at least 1 hour.

      They really were! I didn’t think I would like cheesecake but the lime really cuts the richness of the cheese.
