Gluten free stilton and broccoli soup

What haven’t I done before? Ok, ok I have done this so many times before but it’s so good and I wanted to share it with you (although I hadn’t tasted the bread before…does that count?).

Ingredients:
1x Broccoli, diced into florets
1 x Red onion, diced
1 x Vegetable stock cube
110g Stilton, roughly chopped
25g Butter
Nutmeg
Salt and pepper
Cornflour (optional)

Method:
1. Put the broccoli florets into a large microwavable bowl and pour enough vegetable stock over to cover comfortably (to make the stock put the stock cube into hot water and stir). Cover the bowl with cling film and put into the microwave for 2.5 minutes. Keep checking until broccoli is soft (but not too well done). Watch when you take the clingfilm off, as the steam is very very hot. I usually put it in for 5-6 minutes.
2. Put the butter in a pan, and when hot, saute the onions. Cook until soft but not brown.
3. Add the onion to the broccoli and stock mix . Then add the chopped stilton and 1 tsp of nutmeg – use an electric blender to make the soup thick and creamy (feel free to add in cornflour if you like it really thick). Add salt and pepper to taste.
