What haven’t I done before? Made a Thai beef salad.
Ingredients (serves 2):
0.5 x Fresh lime
1 x tbsp brown sugar
2 x tbsp sesame oil
1 x tsp gluten-free soy sauce
1 x Inch ginger, peeled and diced
2 x Garlic cloves, diced
300g Beef rump steak, chopped
1 x Large vine tomato, diced
0.5 x Cucumber, peeled, diced in large chunks
1 x Red onion, diced
2 x Red chillies, diced
0.5 x Bunch fresh coriander, diced
0.5 x Bunch fresh basil, diced
1.5 x Small iced gem, diced (not traditional but I needed to use some up)
Method:
1. In a bowl put the steak, sugar, 1 tbsp sesame oil, soy sauce, ginger and garlic – mix until the meat is covered. Then cover and marinate for at least 1 hour in the fridge.
2. Whilst the meat is marinating, in a large salad bowl put the diced tomatoes, cucumber, red onion, chillies, coriander, basil and lettuce. Roughly mix.
3. Take the steak out of the fridge. In a frying pan put the remaining sesame oil in, when hot add the marinated meat. Gently stir and turnover until cooked – you don’t want to cook it for too long as it becomes quite tough.
4. Add the meat to the salad and voilà…a really simple, yet delicious Thai beef salad!
