Melt in your mouth gluten free pork belly

What haven’t I done before? Made the rosemary, salt and chilli rub before.


Ingredients (serves 2 hungry people or 3 averagly hungry people):
7 x Pieces of pork belly
2 x tsp of dried, finely chopped rosemary (fresh would be nicer but I didn’t have any)
1 x tsp of salt
0.5 x tsp of dried red chillis
Olive oil


Method:
1. Pop the rosmary, salt, chillis and a good pour of olive oil in a bowl – mix.
2. Coat the pork belly in the mixture and bake at 180 degrees celsius for 20-30 minutes. I popped the pork belly on top of aubergines that had been baked for 30 minutes – it was delicious.
3. Serve with vegetables, wedges or rice.
