What haven’t I done before?
I wanted to look at Spanish tapas this week as I love eating this dish in restaurants. Therefore, I gave it a go and it’s ridiculously simple but absolutely delicious.
Ingredients (serves 2-4 as part of a selection of tapas):
150g x Fantail prawns
2 x Garlic cloves, sliced finely
0.5 x Large red chilli, sliced
1 x Lemon, zest and juice
2 x Tbsp fresh parsley, diced
Olive oil
Method:
- Heat a tablespoon of olive oil in a frying pan, when hot add the garlic and chilli. Cook for two minutes, then add the prawns, cook for a couple of minutes – stirring occasionally.
- Sprinkle the lemon zest and parsley in the pan and gently stir.
- Serve in a small dish and drizzle half the lemon on the prawns. Serve the remaining lemon to your guests as they may want to add more.
