Gluten free prawn toast

What haven’t I done before?

Made prawn toast. I most certainly will be making this again…and again…and again…and again…

Ingredients (16 pieces):

4 x Slices of gluten free bread (I use Genius gluten free bread)
150g x Prawns
1 x Garlic clove, crushed
1 x Inch of ginger, peeled and crushed
3 x Spring onions, roughly diced
1 x Egg
1 x Tsp of gluten free soy sauce
1 x Tsp sesame oil
Sesame seeds (you need quite a lot)
Vegetable oil

Method:

  1. Put the prawns, garlic, ginger, spring onions, egg, soy sauce and sesame oil in a food processor and blitz until you have a paste.
  2. Spread the mixture generously over the bread slices. Pour the sesame seeds on a small plate and then dunk the bread, prawn side down, into the sesame seeds. You want to cover the paste completely.
  3. Heat a frying pan with vegetable oil (be careful) and then put the bread, sesame seed side, into the oil. Fry for 3-4 minutes each side, carefully remove and put on a plate with kitchen paper to help absorb the excess oil. When a little cooler, cut into 4 triangles (don’t let them cool too much as you want them warm when they are served).
