Gluten free avocado chocolate mousse

What haven’t I done before?

Made mousse…out of avocado!

Ingredients (serves 2):

1.5 x Ripe avocados
Runny honey (or equivelant for vegans)
1.5 Tbsps x Cocoa
5 x Mint leaves (plus some for decoration)
200g x Raspberries
1 x Lime
0.5 x Lemon

Method:

  1. Put the raspberries into a bowl with a good drizzle of runny honey and juice from half a lime. Combine, cover and refridgerate for 30 minutes.
  2. Scoop out all the avocado into a processor, add the cocoa, juice from half a lime and lemon, a good drizzle of honey, the 5 mint leaves and a few of the raspberries. Blend until a smooth paste. Taste and add more honey/lemon juice where required.
  3. Scoop into serving bowls, top with a mint leaf and serve with the raspberries.
