What haven’t I done before?
Currently just testing different taco fillings – I love both chicken and chorizo and felt that they would work well together in a taco with fresh avocado and tomato…it was delicious!
Ingredients (serves 2):
0.5 x Red pepper, diced
0.5 x Red onion, diced
0.5 x Orange chilli, seeds removed and diced
1 x Chicken breast, diced
6 x Pieces of chorizo, diced into chunks
Sprinking of: Black pepper, salt, cumin, chilli powder and paprika
0.5 Tsp x Tomato paste
8 x Corriander leaves, diced
4 x Taco shells
1 x Avocado diced and drizzled with lime
1 x Vine tomato, diced
Olive oil
Method:
- In a frying pan, heat olive oil and lightly fry red pepper, onion, chilli. When soft, add in the chicken and chorizo and cook until chicken is brown on all sides (this takes a few minutes). The chorizo will release quite a lot of oil so feel free to drain some of this off if required.
- Add in the black pepper, salt, cumin, chilli powder and paprika. Stir them all in and then add the tomato paste. Cook until the chicken is cooked but make sure you don’t overcook.
- Sprinkle the fresh coriander and you are ready to serve.
- Divide the mix into 4 tacos and top with avocado and tomato. I also like to have them with sour cream or natural yoghurt.
