Gluten free squash and butter bean roast

What haven’t I done before?

I haven’t made this side before – it’s simple but delicious.

Ingredients (serves 4 as a side):

Half of a butternut squash, peeled and cut into cubes
1 x Red onion, sliced into chunks
1 x 400g butter beans
3 x Garlic cloves, diced
Salt and pepper
Thyme
Olive oil

Method:

  1. Pre-heat oven to 180 degrees Celsius.
  2. Put the squash, onions and garlic in an ovenproof dish – season well with salt, pepper, thyme and olive oil. Cover with foil and roast for 30 minutes.
  3. After 30 minutes, remove the foil and add the butter beans (make sure you have rinsed them with cold water). Season again and pop back into the oven. Cook for 15 minutes.
  4. Serve as a side to a fish dish.
