Gluten free avocado mayo and chickpea salad

What haven’t I done before?

Made avocado mayonnaise – I didn’t put quite enough salt and pepper in mine so make sure you season it well.

Ingredients (serves 4):

1 x Cos lettuce, take leaves off and cut in halves
0.5 x Bag of rocket
Cherry tomatoes
Cucumber
200g x Tin of chickpeas, washed and drained
Pine nuts, or any nuts you like
1 x Large, ripe avocado
2 x Tbsp of balsamic vinegar
0.5 x Tsp of English mustard (make sure it’s gluten free)
Salt and pepper
Olive oil

Method:

  1. Put the lettuce, rocket, tomatoes, cucumber and chickpeas into a large bowl.
  2. In a blender, pop the avocado, vinegar, mustard, a good glug of olive oil and lots of salt and pepper.
  3. When the mayo is combined, pop it in the large bowl and give it all a good mix. Then sprinkle with the pine nuts.
