What haven’t I done before?
A breadless burger and served it like this.
Ingredients (serves 2):
2 x Portobello mushrooms
1 x Vine tomato
1 x Ripe avocado
1 x Red onion
2 x Ice gem lettuce leaves
1 x Large gherkin sliced
1 x Egg
250g x Minced beef
Rice flour
Salt and pepper
Oregano
Olive oil
Method:
1. Pre-heat the oven to 180 degrees Celsius – pop the mushrooms on a baking tray and bake for 20 minutes.
2. Meanwhile, put the mince in a large bowl and knead. Season with salt, pepper and oregano. Add an egg and knead further. If too moist add rice flour. When combined, divide into 4 and shape into burgers. Olive oil a frying pan and cook the burgers for around 7 minutes each side or until cooked.
3. When the mushrooms are done take out of the oven. Top a mushroom with a burger, slices of onion, tomato, avocado, lettuce and gherkins. Yum!
